super soft, vegan cranberry-plum bread

Hello sweeties! As I will spend the next 5 days in Austria, I looked through our kitchen if there is any food,I need to use up, before I leave. I found some cranberries and dried plums and so I decided to create a new recipe for a fruity bread! And this is the result! :b This bread is sooo soft, vegan and lactosefree! And it tastes perfect with plum jam or any nutbutter (e.g. peanutbutter). You can even put it in the freezer if you don’t want to eat the whole loaf in just a few days. So you can easily save some bread for later. 😉 If you bake this bread, I would be really happy if you could tag me on instagram, because so I can see your creation and share your picture with my followers, if I like it! You need:

  • 150g dried plums
  • 100g dried cranberries
  • 400ml water for cooking the dried fruits
  • 100g shredded oats/instant oats/oat flour (if you don’t have oat flour, simply use spelt whole wheat flour)
  • 130g spelt whole wheat flour
  • 30g xylit
  • 20g cane sugar
  • 50g shredded almonds
  • one vanilla bean
  • 1 pack baking soda
  • 60g agave syrup
  • a few maple flav drops (optional) (I got mine from Rockysportnahrung)

 

How to:

  1. preheat the oven at 180°C
  2. cut the plums in halves (or in the size of a cranberry, whatever you prefer)
  3. put the cranberries and the plums in a pot together with 400ml of water, wait until this cooks and then let it cook for about 10min on low heat
  4. save the cranberries and the plums PLUS 250ml of the water you used for cooking the plus and add it to the dough later
  5. now put all ingredients except the cooked fruits in a bowl and stir well
  6. then add the fruits and slowly stir again
  7. put a baking paper in a cake tin and put the dough in it
  8. let the loaf bake for 30-35minutes and keep checking if it is already ‚well-done‘
  9. take the bread out of the oven and let it cool down
  10. ENJOY! ( just to remind: best served with plum jam or nutbutter 😉 )
